Portia Little
The author, Portia Little, has
been a food columnist, editor, and feature writer. She has
contributed to magazines and newspapers including Bon Appetit,
The Boston Globe, Boston Herald and Granite State News. Most
recently Portia was editor of CALSnews for the College
of Agriculture and Life Sciences at Cornell. Little, who lives in
Ithaca, NY, is also a resident of the seashore town of Jamestown,
RI. A graduate of Syracuse University with degrees in journalism and
home economics, she is a master's degree candidate at Clark
University in Worcester, MA. |

Portia Little is an expert at food and fun.
Pursuing her passion for great food, Little decided to make a
career of food writing. Her fervor brought her to deciding to pen
her own cookbooks. Not wanting to be another Rachael Ray, Little
decided to create her own niche by writing souvenir cookbooks. They
are small spiral-bound cookbooks that are filled with delicious
recipes, as

After numerous vacations to New England, Portia decided to create
this little nugget of some of New England's favorite recipes.
Some of my favorite recipes from this book are: Brandied

Zucchini Pancakes.
Each recipe is preceded by a quote from New England Poetry,
which help create the atmosphere of being in New England when one
cannot.

Having lived in the Finger Lake region of New York State for years,

Each recipe is preceded by facts concerning upstate New York. Some

them are amusing, others are very interesting, but in every case,

learn to appreciate this area much more.

Spinach Salad

Make this salad up ahead of time, then add the
dressing and toss just before serving.

pounds fresh spinach, washed
1
8-ounce can mandarin oranges,
drained
1
8-ounce can sliced water chestnuts,
drained
1
small red onion, sliced
Prepared salad dressing,
or see recipe below
Break spinach into bite-size pieces. Combine
spinach, oranges, water chestnuts, and onion rings. Cover and chill. Toss
with dressing to serve. Serves 6 to 8 as a side dish.
Note: For a delicious dressing, combine 1/4 cups
salad oil, 2 tablespoons cider vinegar, 2 tablespoons orange juice, 1
tablespoon soy sauce, 1/4 teaspoon salt and 1/4 teaspoon dry mustard.
